Dark chocolate black bean brownies

These brownies are a great source of nutritional goodness, they’ve got iron, fibre and potassium. They’re naturally sweetened using dates which nicely balances the black beans. If you’ve never used beans in your baking before, give it a go I dare you :p

Also, they contain 12g protein per brownie which makes them a perfect post workout snack!

Serves 6

Ingredients:
40g ground oats
40g ground almonds
22g protein powder (optional)
15g ground flaxseed
40g cacao powder
1 teaspoon baking soda
100g chopped dates (or sweetener of choice)
40g chopped dark chocolate (you can add more or melt it)
1 pureed apple (or egg replacer of choice)
1 can black beans

Method

  1. Preheat the oven to 170C
  2. Put all your dry ingredients in a bowl and mix
  3. Blend up the black beans and apple puree with a few drops of water
  4. Stir the contents of the blender into the bowl of dry ingredients
  5. Pour the batter into the pan
  6. Bake for about 25-30 minutes
  7. Allow to cool before removing from the pan
