Chocolate and banana cake

Did I bake a chocolate banana cake straight after a gym session? Maybe…

The texture of this cake worked out beautifully, I think replacing flour with ground almonds and not using ground oats has improved the sponge (and added to the cost my baking, sorry dad)

Serves 6

Ingredients:

  • 150ml soya milk (or preferred milk)
  • 1 tablespoon apple cider vinegar
  • 30g flaxseeds (or chia seeds)
  • 1 overripe banana
  • 25g coconut sugar (or sweetener of choice)
  • 75g ground almonds
  • 25g cacao powder
  • 1 teaspoon baking powder
  • Your fav chocolate bar (mine is @montezumas 100% 😉)

Method

  1. Preheat the oven to 170C
  2. Add the apple cider vinegar and flaxseeds into the milk and set aside
  3. Mash up the banana with a fork
  4. Cream the sugar into the banana
  5. Add the ground almonds, cacao powder and baking powder to the bowl
  6. Stir in the soya flaxseed mixture
  7. Chuck in some chunks of chocolate
  8. Pour into a cake tin
  9. Bake for about 25-35 mins
  10. Pour over some melted chocolate and top with strawberries :p
